Just another day, I thought of baking a cake,just because I was cribbing for a bite of cake.Baking doesn’t need an ocassion or a reason-you can bake and enjoy cookies, cakes anytime anyday>>That’s my mantra for eating CAKES.
Sadly, there was no egg when I scanned the refrigerator, so how to make a sponge cake without eggs was the question of the moment 😦 . But there is always someone who can rescue you in such tough times: SANJEEV KAPOOR (I love his food shows, he is amazing !)
The secret ingredient when you don’t have eggs at home is LEMON and Yogurt. These two super amazing ingredients are readily available in your refrigerator.These two magic ingredients will make your cake fluffy and light.
So here we go:
Ingredients for Egg less Sponge Cake Recipe are:
Refined flour 2 cups
Baking powder 1 1/2 teaspoons
Condensed milk 1/2 tin
Milk 1 cup
Vanilla essence 1 teaspoon
Lemon juice 1 tablespoon
Sugar 1 cup
Unsalted butter 55 grams
Preheat the oven to 180ºC. Grease a cake tin and lightly dust it with flour. Sift flour with baking powder.
Mix together the sugar and butter, till light and fluffy. Add the condensed milk and beat well. Stir in the milk and vanilla essence. To this mixture add yogurt and gradually add the flour, mixing well after each addition. Mix well for three to four minutes till the mixture is smooth and light. Pour lemon juice in this mixture and mix well.
Pour the batter into the prepared tin and bake for about twenty-five minutes. Remove from the oven and let it cool down for five minutes.
