Super Healthy~Corn Salad

Healthy Diet is one of the most important concerns that most of us ignore.It’s important that we include more and more healthy fruits and vegetables in our diet to take good care of body and mind.Corn is one of those healthy ingredients that can be cooked in the form of curry or included in any dish or you can use corn just to make a simple salad.

I like Corn because of it Crunchiness with Sweet Flavour and when this is mixed with other fresh vegetables and fruits it all together makes your menu look fresh and vibrant.

Ingredients that you need for making this Crunchy Healthy Corn Salad are:

  • 1 cup corn kernels
  • a handful of raw peanuts
  • 2/3 cup cucumber, diced
  • 2/3 cup tomato, diced
  • 2/3 cup onion, diced
  • 1/2 cup coriander leaves, finely chopped
  • 1/2 tsp cumin powder
  • juice of 1 lemon
  • salt, to taste
  • 1/2 tsp chilli powder/paprika
  • 1 whole green chili, quartered vertically and sliced thin

Method:

 

  • Heat a pan on high flame and then add corn kernels to it.
  • Roast the corn for a couple of minutes, stirring continuously.
  • Switch off flame, remove corn in a bowl and season with salt, red chilli powder, lemon juice and cumin powder.
  • In the same pan , roast peanuts for a couple of minutes and then remove them in the same bowl as corn.
  • Now add green chillies and give this mixture a good toss.
  • Layer the corn in a plate, top it with tomato, cucumber, onion, coriander leaves and garnish with a lemon twist and serve.
