Beans are highly nutritious and high in protein vitamin C ,Vitamin B6 and Fibre.
Most of the time I make a veggie from this long green beans for my lunch by adding some more vegetables to this this to make it more colurful which is loved my kids also 🙂
The ingredients that you need for making Stir Fry Beans with Potatoes are:
- Beans finely chopped and blanched -250gm
- Potatoes -chopped 200 gm
- Garlic chilli crushed finely
- Dry spices turmeric and coriander
- Refined or olive oil to cook
- Salt to taste
In a skillet add cumin seeds add ginger and garlic
Add onions and fry till they turn pink
Add chopped potatoes and let it cook till they become tender
Add dry spices and cook for 2 minutes
Add blanched beans and cook for 5 minutes
Add the tomatoes and let the whole mixture cook till they soft and tender, you can drizzle few drops if water if required.Let this cook in steam itself without lid.
Your colourful and healthy stir fry beans is ready to be served.
