The bell peppers of different colours will not only add colour but also add flavours to the dish.You can get all the nutrients in one bowl of meal.
You can make this with rice with red yellow or green capsicums or by combining any of these together with onion.You can add vegetable of your choice like peas, carrots and beans.
I make this dish whenever I am in a bit of hurry or not in the mood for cooking !
The ingredients that you need for making Creamy Cheese Rice are :
- Rice- 250 Gm
- Bell Peppers- 3 no’s
- Vegetables as per your choice finely chopped
- Chili and onions chopped – 2 no’s
- Turmeric, coriander and cumin powder- 1 teaspoon each
- Lemon Juice- 1 teaspoon
In a pressure cook or deep vessel add ghee/oil.Add cumin seeds, bay leaves
Add onions and saute for 2-3 seconds
Add bell peppers and chopped veggies
Mix the spices with the veggies and cook for 1 minutes
Add rice and mix well
Add salt and mix
Add 1.5 cups water and let this pressure cook on medium heat for 5 minutes.I have added here less water because the rice was soaked initially
Squeeze lemon juice and serve
