The glaze of Choco Coffee Cream is enough to tempt you for one more bite….
It was one of the lazy Sunday mornings and Sunday means there has to be something special on the menu.It’s one of the pious months in India now and we don’t eat eggs or any non-veg food items during this period.I prefer to bake cakes mostly with eggs but as me and my husband, both wanted to grab a bite of cake so I thought of making this eggless cake.
This eggless coffee cake primarily includes lots of coffee and chocolate powder to give you the taste of coffee in the first bite.I have topped the cake with choco-coffee ganache which has been made the homemade cream at home.This cake doesn’t have cocoa powder as I didn’t have that in my kitchen on Sunday 😞 you can add this in your recipe to add more flavour.
- 2 Cups All Purpose Flour
- 3/4 Cup Unsweetened Cocoa Powder
- 2 Cups powdered sugar
- 1 Cup Vegetable Oil (I Used Canola Oil)
- 1 Teaspoon Salt
- 1 Teaspoon Baking Powder
- 2 Teaspoons Baking Soda
- 2 Teaspoons instant coffee powder
- 3 Teaspoons chocolate powder
- 1 Cup Milk
- 1 Teaspoon Vanilla Extract
For Making Coffee Choco CreamThis primarily involves chocolate, coffee and heavy cream.You can adjust the consistency that you need for your cake or pastry by varying the amount of butter and you can also adjust the consistency of the powder that you are using with cream as per your choice.But to maintain a balance the three ingredients should be in 1:1:1 proportion.

- 2 teaspoons dark chocolate powder or dark chocolate
- 2 teaspoons instant coffee powder
- 1/3 Cup Butter At Room Temperature or you can use vegetable oil
- 1/4 Teaspoon Vanilla Extract
- Heavy or home made cream
- 1/4 cup powdered sugar
Heat the microwave to 350 degree
In a mixing bowl add sugar, unsalted butter or vegetable oil and milk- Mix well
Sieve all purpose flour, baking soda, baking powder and salt into this mixture
Also, sieve chocolate powder and the instant coffee powder
Mix well with spatula
Dust a baking tray with all purpose flour and some chocolate powder
Pour the mixture into the batter and tap to remove air bubles.
Keep this in a microwave for 15 minutes.
After the cake is done (you can pierce a toothpick and check if it’s cooked or not)
Let this cool down completely
For Making Homemade Coffee -Choco cream
If you are using home made cream, mix this with a hand mixer till they become soft smooth with no lumps.The consistency should not be very thick.
Add unsalted butter and sugar to this cream and mix
Sieve the chocolate powder and cocoa powder into this and let this est in refrigirator for 30 minutes.
Keep the cake on the wire rack and pour this mixture over the cake and spread evenly
Let this cake refrigerate for at least 2 hour so that the cream sets on the cake.
Your Coffee Choco Cake made with home made ingredients is ready to Serve.
