Last few days I was so engaged in planning out event of activities for my home bakery , the first step has been taken , I hope it moves ahead with same enthusiasm and glory.
This is one recipe that I are liken by many customers and this is vanilla cupcakes with chocolate ganache frosting.
The ingredients that you need for making this Delicious Cupcakes are :
* 3/4 cup of softened butter(you can use refined oil as well)
* 1 cup of caster sugar or white powdered sugar
* 1 teaspoon vinegar
* 1 Cup of self-raising flour/Maida
* 1 cup of milk
* 3/4 teaspoon baking powder
* 2/4 teaspoon baking soda
* Preheat the over to 180 degrees before you start mixing the batter
* Take 1 cup milk and 1 teaspoon vinegar to this and set aside for 5 minutes till it curdles.
* Mix Sugar, butter (refined oil) in a beater or you can whisk to make it smooth with no air bubbles
* Add in the curdled milk and whisk.Add vanilla essence
* Sieve the white flour, baking soda, baking powder and mix it well.
* To the dry mixture add the wet mixture
* mix it with a spatula slowly in cut fold method so that there are no bubbles left.
* Dust muffin molds with some white flour or grease with butter and pour in the mixture.Tap it so there are no bubbles in the final mixture.
* Put this in preheated oven at 180 degree and bake for 20 minutes in convection mode
* Check your cupcakes are cooked or not with a dry toothpick inserted in the center if it comes out clean it’s done.
* Let it cool for 10 minutes.
You can decorate them with some icing if you want or you can also eat them plain.Here I have done some icing with dark chocolate ,heavy cream and powdered sugar.
For Choclate Icing
100gm dark chocolate
60 ml whipped cream
100 gm powdered sieved sugar
Melt some dark chocolate in the microwave.Add whipping cream to this
Whisk this together ( make sure your cream and your bowl is chilled )and have added here cocoa powder as I wanted to make it more chocolate flavoured, you can ignore this.
Add sugar and milk alternatively to this mixture(start with 1-2 teaspoon, till the consistency is rich, it should not be runny).
You can adjust the consistency as per your requirement by adding sugar or cream.Put this is in a piping bag and decorate your cupcakes as you want. or by using knife or spoon decorate ice your cupcakes.
Eggless Soft Moist Spongy Vanilla cupcakes with chocolate Ganache is ready to be served.
